8-Bean Medley
There’s little more refreshing than to come in from the cold when you’re hungry, and smell a great pot of Bean Soup, steaming hot and ready to eat in the crock pot or on top of the stove. We have a delicious blend of eight beans, some of which you might not find in your local store, but they’re in our mix. Tell us how many pounds you want, and we’ll send them right out to you
This selection is a cornucopia and colorful, flavorful blend of nutritious beans: pinto beans, black turtle beans, red beans, Anasazi beans, Great Northern white beans, black-eyed peas, split peas and baby lima beans that you’re sure to enjoy. The package contains a whole pound of these great beans, along with recipes to prepare them. You may not find all of these beans in one place at your local grocery store, especially Anasazi beans. And why buy a whole pound of each variety when you don’t need that much for your favorite recipes?
These beans are a necessity for every kitchen. Add them to your favorite soups and stews, or serve them as a side dish. Experts note that a cup of cooked dried beans daily can help control cholesterol, as well as aid in the control of insulin and blood sugar. Just to get you thinking about how wonderful these beans are to experience, here’s a recipe that you’re sure to enjoy.
8-Bean Soup
2 cups of our 8-bean medley
3 Tbsp. olive or vegetable oil
1/2 cup onion, chopped
1 tsp. garlic, minced
1/8 tsp. mint
1/2 tsp. coriander
1/2 tsp. marjoram
1/2 tsp. summer savory
2 tsp. fresh parsley
1/2 cup celery, chopped
1/4 cup green pepper
1 carrot, chopped
1 tsp. salt
1/2 tsp. pepper
Wash beans in cool water. Cover with water and soak overnight, OR bring to a boil for 5 minutes, remove from heat, cover and let rest for 1 hour. Drain, rinse and cover beans with water. Bring to a boil, cover and simmer for 1 hour. In a skillet, saute onion and garlic in oil until transparent. Add this mixture and all remaining ingredients to beans and simmer, covered, 1 more hour until beans and vegetables are tender, stirring occasionally. Thin to desired soup consistency. Serves 6.
Breads
Salsa and Chili Sauce has many different kinds of bread mixes. You’re sure to find a favorite between jalapeno corn bread, Traditional Indian Fry Bread Mix, Brew Bread mixes, Hopi Blue Corn Muffins, and a very different and delicious Pueblo Corn Bread Mix. We even carry Mesquite flour; it’s not that easy to find on the web. Our organicMesquite flour is prepared from Mesquite beans. Mesquite can be used as either a flour or a spice. It’s 100 per cent natural, low in carbohydrates and fat, high in dietary fiber, and it’s naturally sweet. You can sprinkle, shake, or mix mesquite into all of your everyday foods to create healthier and tastier dishes with very little effort.
The mesquite flour that we carry is certified organic from pods carried from wild trees in Argentina. The flour is made by the bakery training school in a rural Diocese in Argentina. The Peruvian flour is made in the northern Tambogrande region. Its distinctive flavor is similar to mocha coffee, cinnamon and chocolate – it is not found in any other flour. It is naturally sweet and contains about 40% sugar (sucrose).
Most people are familiar with mesquite wood, which is known for the distinctive flavor imparted from its smoke. However, few are aware that the bean pod of the mesquite tree is an ancient food that was an integral part of the daily diet of Native Americans in Southwestern USA, Mexico and many areas of South America.
When used in baking, mesquite is generally used in combination with other flours using about 30 per cent mesquite to 70 per cent grain or rice flour. Try mesquite in your pancakes, muffins, cakes, cornbread or cookies. As a spice, sprinkle generously then grill, fry or broil almost anything for a great mesquite flavor. Mesquite is great for flavoring steaks, chicken, pork and fish. Sprinkle it on vegetables before grilling; add it to your breading for meat and fish. It can be added to vegetable stir-fries, scrambled eggs, biscuits, breads, soups, even ice cream.
